Seasonal menu
In Japan, where we cherish the four seasons, we are blessed with an abundance of ingredients throughout the year. Seasonal vegetables not only taste delicious but are also packed with nutrients, providing essential energy for people.
At Meiseki no Yado Kagetsu, we use carefully selected, vibrant seasonal ingredients to create exquisite dishes that highlight their natural flavors and add an extra touch of creativity. Our beautifully presented kaiseki cuisine, rich in seasonal themes, is designed to delight all five senses and leave you feeling fulfilled in both body and spirit.
Koshu beef
Only the finest Black Wagyu cattle, meticulously raised by the Koshu beef Cooperative Association members, earn the "Koshu beef" brand, being graded at quality (meat quality) ranks 4 and 5. With a commitment to breed and lineage, the same level of wagyu calves as Matsusaka and Kobe beef are produced and introduced. From safe feed and breeding methods to distribution, everything is carefully managed.
Koshu beef, raised in Yamanashi's rich nature, is known for its tender texture and vibrant meat color. The marbled fat that melts in your mouth, the sweet meat juices, rich umami, and smooth texture are truly exceptional. At Meiseki no Yado Kagetsu, we offer a kaiseki plan where you can fully enjoy the exquisite taste of this beautifully vibrant meat.

Characteristics of Koshu beef
Tender meat
Quality With a texture so tender, there's hardly any need to chew. The soft meat is easy to eat, making it suitable for children, women, and the elderly.
Melting marbled
Fat The marbled fat melts in your mouth, offering a sweet flavor that spreads along with the beef's natural umami.
Beautiful and vibrant meat color
The secret to the beautiful meat color lies in the rich nature of Yamanashi. The beautifully marbled beef is not only delicious but also visually appealing.
