At Meiseki no Yado Kagetsu, we use carefully selected, vibrant seasonal ingredients to create exquisite dishes that highlight their natural flavors and add an extra touch of creativity. Koshu beef

Only the finest Black Wagyu cattle, meticulously raised by the Koshu beef Cooperative Association members, earn the "Koshu beef" brand, being graded at quality (meat quality) ranks 4 and 5. With a commitment to breed and lineage, the same level of wagyu calves as Matsusaka and Kobe beef are produced and introduced. From safe feed and breeding methods to distribution, everything is carefully managed.

Koshu beef, raised in Yamanashi's rich nature, is known for its tender texture and vibrant meat color. The marbled fat that melts in your mouth, the sweet meat juices, rich umami, and smooth texture are truly exceptional.
